I do not have Celiac disease, but I haven’t eaten wheat since approximately 2007.
People often ask me, why?
1- Improved digestion & regularity
2- Sharper mind
3- Not feeling bloated after meals (though, eating 6 servings of rice will still accomplish that)
4- Forces you to eat higher quantities of healthier foods (aka, not as easy to avoid vegetables)
5- It’s hard to find wheat products made with organic, less processed wheat (though you can)
6- You wouldn’t know if you felt better off of gluten unless you actually tried to go off of gluten for at least 45 days, without cheating.
7- Absence of evidence is not evidence of absence (you may not be at optimal health, but, just because you feel ‘fine’, doesn’t mean you feel optimal.)
8- It’s not hard to do – if you make the commitment to do it.
9- I constantly get healthier, and, any time that I do try wheat (it happens accidentally sometimes), I feel awful
10- Everything I’ve read about eating gluten tells me that’s it’s probably not a good idea for me.
